La Cuisine peut donc être considérée comme une technique scientifique" (préf. p. 5). Ensuite, une cinquantaine de pages sont consacrées à la gastronomie et la dernière partie, p. 201-363, au "Répertoire gastronomique" contenant des recettes de cuisine parmi lesquelles on trouve aussi la fondue et les "reuchtis" vaudoises
