Eastern cooking comes from the lower-Yangtze region of Jiangsu. This is a diverse cuisine, with hundreds of varieties of soups and stews made with a stock of soy sauce and rice wine. Stir-fried seafood dishes are popular too. Sichuan Cooking Sichuan cooking draws from an enormous range of ingredients and styles of preparation. It's the spiciest of Chinese cuisines and, arguably, the tastiest. Chili peppers, ginger, and garlic, along with bean curd and hot and sour sauces, give dishes lots of zest and flavor. Among the classic Sichuan dishes you're likely to be served at lunch or dinner are hot and sour soup, chicken with peanuts, and smoked duck. Banquets The Chinese don't need much of an excuse to hold a banquet. Regardless of the occasion, banquets are festive, gastronomic treats and are usually quite formal. You'll probably win a few points with your host if you can demonstrate some proper banquet etiquette. Western-Style Restaurants Over the past few years, Western food has taken China by storm. McDonald's, KFC (formerly Kentucky Fried Chicken), and other American fast-food joints are among the most popular cheap Western restaurants, especially with families and teenagers. For diners with more refined palates, French and other Western cuisines are available in most major Chinese cities.
