Gary Taubes does careful research to debuke myths about dietary fat, carbohydrates and cholesterol as they relate to weight, diabetes and heart disease.  He gives interesting insight into the stubborn way that health scientists have clung to some dangerous myths without attempting to verify them with the gold standard of scientific study.  Taubes doesn't provide definitive proof, but he throws down the gauntlet demanding that health scientists stop ignoring evidence that runs contrary to their beliefs. Although this book is dense and the discussion becomes somewhat repetitive, it is definitely worth the read.
