Abstract:

In this program, Poh reconnects with her friend Andre Ursini for some more of his northern Italian cooking. Andre is obsessed with polenta and has even opened a polenta bar. He invites Poh to his kitchen to learn a little about this humble ingredient that is essentially ground corn. For Poh, Andre cooks polenta with mushrooms and adds great dollops of creamy Gorgonzola, then surprises her with polenta ice cream for dessert! Just as polenta is a northern Italian staple, Poh cooks a Chinese staple - pork and cabbage dumplings. And to get some inspiration, Poh visits a restaurant specializing in dumplings, freshly made by 21-year-old dumpling maker Qin Qin and a master dumpling maker from China, Mr. Wong. Andre cooks polenta with ragu alla bolognese, a traditional northern Italian dish, using white wine and milk in the bolognese sauce. To top off his recipe, Andre needs a good Parmesan cheese, so he and Poh visit a cheese wholesaler with the biggest cheese-aging room in Australia.
