Research has shown that psychological characteristics may help to identify "at risk" students and facilitate the design of diagnostic inventories and student support interventions that promote successful academic outcomes. The research reported in this thesis tested the utility of general social cognitive models for integrating the diverse correlates of academic performance at university. The first empirical chapter tested an extended theory of planned behaviour (TPB; Ajzen, 1991) as a model of academic performance (reported in chapter 2). A meta-analysis of correlates of grade point average (GPA) is reported in chapter 3 and in chapters 4 and 5 social cognitive (Bandura, 1997) and goal theory (Locke & Latham, 1990) are drawn on to explore hierarchically organised models of academic performance

This digest provides a framework for professional development of outdoor educators. Outdoor and environmental educators share similar principles of outdoor learning. Thus, the performance standards recently drafted by the North American Association for Environmental Education (naaee) can serve as a useful guide for outdoor education generally. NAAEE-recommended competencies fall into seven categories. First, knowledge and skills are needed in such areas as safety, group management, problem solving, technical equipment, environmental protection, and expedition planning. Second, teacher understanding of basic education foundations, current educational theories, and children's physical and intellectual development is as important for outdoor learning as in the classroom. Third, educators interested in conducting outdoor education experiences regularly would benefit from a grounding in the history and evolution of outdoor education and its methodology. Fourth, outdoor educators should have the knowledge and skills needed to awaken in students an environmental sensitivity or appreciation. Fifth, use of a variety of teaching methods to directly involve students in exploring the world around them fosters creativity and critical thinking. Sixth, capable outdoor educators create a safe place for learning that encourages exploration and discovery and provides an open and stimulating environment. Finally, outdoor teachers need skills in assessment practices. (Sv)

Military intermediate moisture (IM) sandwiches have a shelf life requirement of two years at 80 degrees F. The stability of IM sandwiches is maintained using Hurdle technology, which typically provides a pH below 5.5 and a water activity below 0.89. These levels are effective for microbial stability; however, they can have an effect on the sensory quality of the product and can limit the development of new products. This report describes a series of challenge studies to raise both levels. Two IM products, the Italian pocket sandwich (IPS) and the bacon cheddar sandwich (BCS) were reformulated to a pH above 6 and a water activity above 0.9. Various bioactive ingredients (BIs) were then added to the reformulations (as an additional hurdle), in the form of Purasal(R)P (lactate/diacetate), epsilon-polylysine, or Nisaplin (R)(nisin), to provide microbial stability. The studies were conducted on the reformulated products with five different strains of Staphylococcus. aureus, which would be the most likely microbial contaminant in these products. The studies were carried out for 180 days at 25 degrees C. For the IPS the three BIs were incorporated into both the bread and the filling. It was determined that 4% purasal, 2.5% epsilon-polylysine, and 1.2% nisin were effective in inhibiting the growth of S. aureus. For the BCS only purasal and nisin were incorporated. They were added in the same concentrations as in the IPS, but were incorporated only in the bread. Results were similar; however, there was less S. aureus growth in the BCS control than in the IPS control. Though all three ingredients inhibited the growth of S. aureus, nisin appeared to be the most effective based on its ability not only to inhibit growth, but also to reduce the original bacterial population. It also had less effect on the sensory properties
